This well-crafted coffee is produced with an unmatched attention to detail. This coffee is produced and harvested on various farms of small producers, at an average altitude of 1750 masl. Here, coffee is grown under a carefully managed canopy of shade trees which provide essential Nitrogen to the coffee trees and minimize the need for fertilizers.

This reputable co-operative supports more than 4,700 members in the Tarrazu region, a province of San Jose. The co-operative receive cherries from many small farms and consistently process their coffee into a well-balanced regional blend called La Pastora.

The coffee is delicately harvested by hand, and only the ripe cherries are picked. It is then transferred the same day to be processed by mechanical washing in an ecological mill, before finally laid to dry in African beds for 6 to 7 days.

Coopetarrazu has an equally intricate model of income diversification with a profitable agriculture supply store and grocery store. Cooperative members have access to low interest loans and healthcare.
