Organic Ethiopia Sidamo Washed Grade 1

FLAVOR: Peach, Grapefruit, Hibiscus, Sweet

How it tastes? Exceptionally balanced Ethiopian coffee with a juicy peach backdrop and delicate fragrant flavors. Delectable notes of pear, green apple and honey lend a nice complexity. A milk chocolate mouthfeel rounds up this medium-bodied, floral coffee.
Weight: 20 LB
How it tastes? A smooth and graceful cup of milk chocolate. Complex, but delicate notes of granny smith apples and caramel complement intriguing flavors of cacao nibs and berry tart.

The coffee’s thick chocolate mousse flavor and texture crescendo’s as it cools. Soft accent notes of macadamia nut and sweet vanilla perfectly round out the finish.

Great for espresso or light roast drip. As an espresso, dark chocolate and honey notes hug the cup as syrupy layers of candied cherries provide definition.
Recommended Roast: Medium - Dark. Medium roast develops a structured cup with green apple, dark chocolate, caramel and honey. The finish is rounded with plenty of juicy orange, raisin and nutty aroma.

Start with a hot drum and high heat, but keep the airflow low to manage early heat transfer and prevent scorched beans. Extend the Maillard phase to develop more caramelized sugars.

Dark roast develops layers of dark toffee sweetness and plum jamminess. Chocolate notes are enhanced as citrus flavors become more muted.

Member plots (about 2-5 ha) stretch along the steep foothills of the Mendebo mountains in the Sidama zone, in Ethiopia's southern highlands.  The combination of high altitude, rich red loam soil, a thick canopy of indigenous forest trees and Shilicho’s agronomics, produces an exceptionally bright and clean cup. Shilicho translates to “good taste” in the Sidama language, and the co-op’s coffee lives up to its name!

The Shilicho Co-op is a member of the Sidama Coffee Farmers Cooperative Union (SCFCU) founded in 2001 to represent small-scale farmers. A mission very much in line with Shilicho’s philosophy that is focused on supporting and growing with the coffee farming communities. To support its affiliate co-operatives, the SCFCU provides technical assistance, share modern farming equipment, and provide organic certification programs for its members. Shilicho is actively invested in community development projects and places an emphasis on education - giving scholarships to members' children and building schools.
